Position Overview

We are looking for an exceptional Beverage Head – Director of Mixology & Beverage Innovation to lead and redefine the beverage experience across all Della hospitality venues.

This is a high-impact leadership opportunity for a globally exposed beverage visionary who combines luxury hospitality expertise, advanced mixology craftsmanship, and strong personal branding capabilities. The ideal candidate is equal parts innovator, curator, performer, and strategist — capable of building one of India’s most aspirational beverage programs.

You will be responsible for conceptualizing immersive beverage experiences, elevating operational excellence, driving beverage profitability, and positioning Della as the definitive luxury nightlife and cocktail destination in India.

Key Responsibilities
1. Beverage Innovation & Luxury Mixology
Conceptualize and lead a globally benchmarked beverage program with a strong focus on wine-led mixology, premium spirits, champagne cocktails, botanical infusions, and experiential serves.
Create signature cocktail collections tailored to Della’s diverse hospitality formats — including high-energy nightlife, luxury poolside experiences, destination weddings, corporate events, and private villa hosting.
Introduce cutting-edge beverage trends including:
Molecular mixology
Zero-waste bar programs
Barrel-aged cocktails
House-made bitters and tinctures
Smoke and sensory-driven presentations
Sustainable luxury beverage concepts
Continuously track international beverage trends and adapt them for the Indian luxury hospitality audience.

2. Experiential Beverage Design & Guest Theatre
Elevate every beverage into a luxury visual and sensory experience aligned with Della’s design-led hospitality philosophy.
Curate dramatic presentations using bespoke glassware, artisanal ice programs, tableside rituals, aroma layering, and immersive service theatrics.
Design exclusive guest experiences including:
Wine and spirit tasting journeys
Chef-paired beverage menus
VIP mixology showcases
Celebrity and HNI hosting experiences
Destination wedding beverage concepts
Collaborate closely with culinary, events, nightlife, and design teams to ensure cohesive guest storytelling across all touchpoints.

3. Brand Building, Media & Digital Presence
Serve as the face of Della’s beverage culture across media interactions, influencer collaborations, PR activations, and luxury hospitality events.
Partner with marketing teams to create visually compelling, high-engagement beverage content for Instagram, YouTube, and premium digital platforms.
Develop trend-forward beverage concepts designed to drive organic social visibility and destination appeal.
Host luxury lifestyle influencers, beverage critics, celebrities, and media personalities with curated tasting experiences that strengthen brand positioning and digital reach.
Build Della’s reputation as India’s most aspirational luxury beverage and nightlife destination.

4. Leadership, Operations & Commercial Excellence
Lead, mentor, and inspire a high-performing team of bartenders, mixologists, and beverage professionals across all outlets.
Establish world-class SOPs for beverage preparation, service standards, presentation, hygiene, and guest engagement.
Manage beverage costing, pricing strategy, inventory control, vendor relationships, and profitability optimization while maintaining uncompromising luxury standards.
Source premium spirits, rare labels, boutique wines, artisanal ingredients, and globally relevant beverage products through strong domestic and international supplier networks.
Ensure full compliance with safety, licensing, and operational standards.

Candidate Profile
Experience & Exposure
8–12+ years of progressive experience in luxury hospitality, premium nightlife, or ultra-luxury resort environments.
Proven experience across both international hospitality markets (UAE, UK, Europe, Singapore, Southeast Asia, etc.) and the Indian luxury hospitality ecosystem.
Strong background in leading high-volume premium beverage operations while maintaining exceptional guest experience standards.

Technical Expertise
Certified Sommelier or professionally accredited mixologist preferred
(WSET Level 3+, Court of Master Sommeliers, or equivalent international certifications).
Deep understanding of:
Old-world and new-world wines
Premium spirits and craft cocktails
Beverage pairing strategies
Luxury guest preferences and evolving nightlife trends
Strong operational and commercial acumen with proven success in beverage revenue growth.

Minimum Qualification:

Certified Sommelier (WSET Level 3 or higher preferred) or a globally recognized mixology credential

Minimum Job Experience:

8–12+ years of progressive experience in luxury hospitality, premium nightlife, or ultra-luxury resort environments
